When four inches high, thin to three inches apart. Rosebud-sized thinnings are delicious cooked whole. Harvest mature beets when they are three inches in diameter.

A very small seed cavity in this six inch diameter melon makes it ideal for serving in halves. Sweet and juicy golden flesh that is high in vitamins A, B, and C. The plants are tolerant to powdery mildew.

Small and very sweet. Early to mature. Petite at just three and a half inches by about three fourths inches and is uniformly thick, smooth, thin-skinned and small-cored.

Care and Maintenance:

It takes seeds an estimated fourteen to twenty five days to germinate. Plant seed at a depth of one fourth inch and space fifteen inches / two inches. It takes approximately sixty to sixty-five days to harvest. For the Gulf Coast plant February - May and August - September.

Scarlet Nantes Carrots are a favorite for their high quality. Their crispy, sweet flavor makes them perfect for snacking! Nearly coreless, they grow to be six inches long and feature a great red-orange color. They do particularly well in clay soil.

Care and Maintenance:

It takes an estimated fourteen to twenty-five days for seeds to germinate. Plant seed at a depth of one fourth inch with two inch spacing. It takes approximately sixty-five to seventy day to harvest. For the Gulf Coast, plant seeds in February - May and August - September.

Instructions:

In full sun and well--drained soil, sow four seeds per inch in the row. Cover the seeds firmly with soil. When the plants are two inches tall, thin to three inches apart in the row. for fresh carrots all season, plant every three weeks until seventy-five days before the first fall frost.

One of the sweetest varieties of carrots, with a crisp fresh crunch. Generally deep orange-red roots are smooth skinned., fine grained and nearly coreless. A very versatile carrot!

Cauliflower Snowball X is a popular early variety that produces medium-sized, pure-white heads with mild flavor. Delicious and nutritious when used raw in salads, boiled, steamed, or pickled. A good source of vitamins A and C. Cool weather crop.

DID YOU KNOW? It is believed that Cauliflower has been grown and sold in the United States for over 200 years, but has only become popular in the past twenty-five years.

Patriot Seeds Cauliflower, Snowball Self Blanching Planting Instructions:

Sow seeds indoors four to six weeks before average last spring frost. Keep soil temperature around seventy-five degrees Fahrenheit, then at sixty degrees Fahrenheit afterwards. Provide direct sunlight. Place seed one-fourth inch beneath the surface and cover with fine soil. Seeds should be three to four inches apart. Transplant seedlings outdoors when four to six weeks old. Plants should be kept in rows fifteen to twenty-four inches apart in rows that are spaced twenty-four to thirty-six inches.

HARVESTING INSTRUCTIONS:

When the cauliflower heads are white, firm and compact, then it is time to harvest. Ideally, the curds will be six to eight inches in diameter for harvesting. Cut the heads off the plant with a large knife, fifty to sixty days after transplanting. Leave one to two inch stem on each head. After harvest use cauliflower as soon as possible for best flavor.

Allow plants to grow together for support and better pollination. Harvest when silks turn brown and kernels spurt milky white juice when punctured.

Bushy plants produce seven inch long green pods filled with greenish-white pea marked with a prominent black eye. The most popular of all southern pea varieties. Tender and delicious!

Suggestions:

For healthy vines, don't plant southern peas on same ground year after year. For dried peas, let the pods mature and ddry on the vines. Recommended for warm climate areas.

Slicer. Cucumber Spacemaster grows bushes of compact vines and runners, making it require only one third the space normally needed for cucumbers. Fruits are tasty, dart green, and uniform at seven and a half to eight inches long. These Mosaic-resistant plants produce heavy yields.

Care and Maintenance:

It takes an estimated eight to ten days for seeds to germinate. Plant seed at a depth of one half inch, with spacing two feet / fifteen inches. Takes approximately sixty days to harvest. For the Gulf Coast Region plant seed in February - June.

Thin to one plant every fifteen inches when they are two inches tall. Plant at three week intervals up to mid summer for fresh cucumbers all season. Keep fruits picked.

Slicer/Pickling. Cucumber Straight Eight is an All-American Winner! These perfectly straight cucumbers have sweet, mild flesh. The excellent flavor makes this a super choice for salads or for dipping. If picked small, the cukes are good for pickling, too. Home gardeners keep on growing this old favorite for its large, flavorful fruits.

Care and Maintenance:

Slicer. Cucumber Tendergreen is a burpless variety that should be tried in every garden. Fruits are very smooth and sweet. The skin is not bitter, and the entire fruit can be eaten without peeling. These heavy yielders should be picked when three to five inches long.

Fennel bulb can be eaten raw or prepared in soups and pastas. Its feathery leaves are attractive growing in the garden or as as a garnish. Many meat dishes use fresh or dried Fennel leaves. Fennel seeds are used as a spice, particularly tasty in breads. The licorice flavor and scent make Fennel a favorite.

Valley Greene Kale Vates Dwarf Blue curled care and maintenance instructions from package. Estimated days to germinate is five to fourteen days. Plant seeds at a depth of three-sixteenths of an inch, with spacing being two inches between seeds and rows. After thinning, spacing will be twelve to eighteen inches. Estimated days to harvest is 55.

Leek American Flag is a sweet member of the onion family. It has large, white stems that often reach eight to ten inches long and two inches across. These stems are tender and have excellent flavor, making them ideal fresh or cooked in soups.

Instructions: Start seeds indoors in a sunny location eight weeks before the last frost. (Plants about six inches tall will transplant best). Or, sow directly in the garden every two inches and cover with soil. This to four inches apart when four inches tall. Note: As they mature, they should be earthed up and blanched like celery.

Lettuce Black Seeded Simpson is the most popular loose leaf lettuce for home gardens everywhere. Its frilled, crumpled leaves are attractive, crisp, tender, and appetizing. This cool weather vegetable is a vigorous grower, high in vitamins A and B.

It takes seeds an estimated seven to ten days to germinate. Plant at a depth of one fourth inch, spacing eighteen inches / six inches. It takes approximately forty-five days to harvest. For the Gulf Coast, it is suggested to plant seeds January - March and August - December.

Sow directly in the garden as early as the soil can be made fine and loose. Plant seeds every two inches, covering firmly with soil. Thin plants to six inches apart when they display two or three leaves. As plants begin to crowd, pick individual leaves regularly for use.

Delicately crisp salads with excellent flavor. Large, medium green leaves; slow to bolt.

Sow in average oil in full sun in early spring for first crop, in late summer for fall crop. Sow thinly in rows twelve inches apart and cover with one fourth inch of fine soil. Firm lightly and keep evenly moist. Seedlings emerge in seven to ten days. Sow every two weeks to extend harvests.

A burst of summertime sweetness! Honeydew is a seasonal favorite. It's a reminder of cool evenings filled with the gentle flicker of fireflies. Start indoors or directly in mound of soil, each about two feet wide. This breakfast table favorite ripens in warm weather. Be sure to plant in a sunny spot.

Watermelon Crimson Sweet has exceptionally sweet, deep red flesh that hides behind a distinctively dark green striped rind. These round melons are high in vitamins A, B, and C and can grow to twenty-five pounds. They're a main season favorite.

Its name describes this melon perfectly. Sugar Baby's flesh is very sweet, and the fruit grows to about eight pounds-just right for the refrigerator. Early season variety. High in Vitamins A, B, and C.

Ferry Morse Onion Evergreen Bunching Instructions:

Sow directly outdoors in full sun and well-drained soil. Plant two seeds every two inches. When seedlings are three inches high, thin to stand four inches apart. Harvest when tops begin to bend. Dig onions, dry in the sun a few days, then store.

A Halloween favorite, Jack O'Lantern Pumpkins will grow to twelve to sixteen inches in diameter. The shell is bright orange, hard, and furrowed. Even though it's perfect for carving. It makes good pies, too. Ready to harvest in fall when rind cannot be dented with a fingernail.

Care and Maintenance:

It takes an estimated seven to ten days to germinate. Plant at a depth of one inch to one-in-a-half inches, with spacing eight feet / eight feet. It takes approximately one hundred days to harvest. Suggested planting time for the Gulf Coast is March - June.

Instructions:

Sow a few seeds over a hill nine to twelve inches tall and one foot across. Choose an area with full sun after any chance of frost has passed. This to three plants per hill when one inch tall. Squash Black Beauty is an early, productive, and easy to grow variety. This is a favorite summer squash with its glossy, dark green gruits and fantastic flavor.

Care and Maintenance:

Seeds take an estimated eight to ten days to germinate. Plant seeds at a depth of one inch, with spacing four feet / four feet. Approximately fifty days to harvest. Suggested planting season is April - August.

Instructions:

Start seeds indoors three to four weeks before outdoor planting time for earliest harvest, or sow directly outdoors in a sunny location. Sow four to six seeds around a twelve inch diameter hill. After germination, thin to three seedlings per hill. Harvest regularly.

This colorful blend is flavorful and fun to grow. Includes: 20% 'Parrot', 20% 'Cardinal', 20% 'Flamingo' 20% 'Canary' and 20% 'Oriole'.

Sow in average soil in spring as early as ground can be worked. Sow about six inches apart and cover with one half inch of fine soil. Firm lightly and keep evenly moist. Seedlings emerge in seven to fourteen days. Thin to stand about twelve inches apart when seedlings are one to two inches tall. Takes full sun, 6 plus hours and approximately sixty days to harvest. If planting in a container, one plant per twelve inch container. For the Gulf Coast plant January - April and August - November.

Bushy plants grow to be about twenty inches tall. Produces purple fruits about the size of cherry tomatoes that make delicious tart sauces. 

Care and Maintenance:

It takes approximately seven to ten days for seeds to germinate. Plant seed at a depth of one fourth inch, spacing three feet / two feet. It will take approximately seventy-five to eighty-five days to harvest.

Planting Instructions:

Sow in open ground well exposed when soil is warm. Thin when plants are a few inches tall. Control weeds with mulch.

Suggestions:

Despite being relatively tolerant to drought, tomatillos enjoy about an inch of water each week. Apply mulch to suppress weeds and retain moisture.
